View Full Version : Cream of Cauliflower Soup

My girlfriend gave me this recipe and .. mmmm good (oh and really easy)
4 tbsp butter
3 tbsp oil
4 slices of bacon (I use pancetta) cut up
Melt oil/butter in pot.. fry bacon until done to liking.
Add 945 ml of chicken broth
1 head of cauliflower cleaned and cut up
1 med. onion diced
Cook for 10 minutes
Take 1 cup of cream and whisk in 4 tbsp of flour until creamed.
Add slowly into soup stirring constantly.
Cook for additional 6 minutes.
Add 4 drops of tobasco (I use a few more)
Freshly cut up parsley..
Stir and serve!

I just bought one of those orange cauliflowers for Tuesday's dinner....maybe I will do this instead with it. '
Just have Dad, Mother in Law, son and Daugther in law....
Far cry from when I used to have 20-30 over.
My husband is making a prime rib on the grill, baked potatoes or mashed, broccolli, cauliflower - or cauliflower soup, and what ever my son brings - he does most of the cooking.
I bought spinach and tomato flavored philo shells to fill with bruschetta topping - just a little appetizer.
I have only planned my cookies for dessert...maybe I will do a pie too?
I go back to work in the 26th for my 7 days, then we leave on 1/4 for our vacation so I don't want to have much food in the fridge or freezer.

I will have to try this recipe when my husband goes back to work. He eats very few vegetables and I love them. I especially vegetable type soups and this sounds good.

I HATE cauliflower, but last night at our Xmas party, the restaurant served cream of cauliflower soup and it was excellent! I think anything with cream can taste good! Thanks for posting this recipe, as I was going to look one up on line to try after the holidays.
An interesting cauliflower creation we saw at the height of the low Carb diet period came from one of the chain restaurants. They did a thing with cauliflower that resembled mashed potatoes and was delicious.
I don't know if they abandoned it after the craze died out...

Well really, start with a base of cream, butter, chicken stock, bacon crumbles and fat - you could throw just about anything in there with it (cream of sawdust? dryer lint?) and it would be delicious. :D

I have a cauliflower, cheddar cheese soup, made with beer that is also very good. Just hide that smell and taste of cauliflower and I will eat it!

Mmm. Love beer cheese soup. The ex used to make it all the time, served with cripsy croutons it's one of the best winter warmer uppers.
Note to self: get that recipe.
